This cake uses ground flaxseed in place of the egg.

Recipe Ingredients for Gingerbread Cake w/ Flaxseed

7 oz. Pastry Flour
1 1/4 tsp Baking Soda
1 1/2 tsp Dried Ginger
3/4 tsp Ground Cinnamon
3/4 tsp Salt
1 tbs. Ground Flaxseed
3 tbs. Water
4 oz. Granulated Sugar
5 oz. Molasses
4 oz. Vegetable Oil
4 oz. Hot water

Recipe Directions for Gingerbread Cake w/ Flaxseed

  1. Mix the flaxseed and 3 Tbs. water and let sit for 2 mins.

  2. Sift together all dry ingredients onto a sheet of parchment paper.

  3. In a separate bowl whisk together all wet ingredients including flaxseed mixture, but not the hot water.

  4. Mix wet and dry ingredients together.

  5. Pour hot water over the mixture and continue to mix.

  6. Pour batter into 9" pan and bake at 350F until done.
