Wonderful zesty comfort food with lots of fiber!

Recipe Ingredients for Ginger Yam Soup with Chicken

3 1/2 pounds yams
1 jalapeno pepper
7 cups fat free Chicken Broth
3 garlic cloves
1 1/2 tsp ginger
1/4 cup cilantro
1 pound chicken breast
1 sweet onion

Recipe Directions for Ginger Yam Soup with Chicken

Dice and saute onion in 2 Tbsp of broth about 8 minutes. Dice jalapeno and mince garlic and ginger. Add jalapeno, garlic and ginger and cook 2 minutes. Add 4 cups broth and yams cut into 1 inch pieces. Bring to a boil. Reduce heat to low-ish, cover and cook 15-20 minutes or until potatoes are tender. Working in small batches puree in blender or food processor. Use remaining broth to thin. Add cooked diced chicken and chopped cilantro and cook until heated through.
