Recipe Ingredients for Ginger Squash Soup

3 serving unsalted vegetable stock
5 5 slices (1" dia) Ginger Root
2 clove Garlic
1 cup Milk, Nonfat, Fluid

Recipe Directions for Ginger Squash Soup

  1. Cut all vegetables into large chunks and boil in veggie stock. Add ginger and garlic while cooking. Add apple chunks toward the end. Remove skin from squash when cooked.

  2. Puree cooked vegetables in blender until smooth. Add milk to thin if necessary.

  3. Put pureed mixture back into pot and reheat, adding coconut milk and remaining skim milk until thin/thick as desired. Salt and pepper to taste.
