Recipe Ingredients for Ginger Soy Beef Stirfry

6 oz. beef sirloin, strips
1/2 cup asparagus, cut diagonally in 2" pieces
1/2 cup carrots, julienned
1/4 cup edamame
3/4 cup mushrooms
1/4 cup orange juice
1/8 cup low-sodium soy sauce
1 tbsp. honey
1 tbsp. water
1/2 tsp. ground ginger
1 tbsp. green onion
1/4 tsp. garlic powder (optional)
1/2 tsp. sesame oil

Recipe Directions for Ginger Soy Beef Stirfry

  1. Heat a wok or large saute pan with non-stick cooking spray.

  2. In a small bowl, mix OJ, soy sauce, honey, water, ginger, onion, garlic powder, and black pepper if desired. Add red pepper flakes for extra heat. Set sauce aside.

  3. Add beef to hot pan and cook until lightly brown, stirring continuously. Add veggies in the following order, cooking 1 minute between each addition: carrots, edamame, asparagus, mushrooms.

  4. Add sauce gradually in a few parts to moisten. Continue to stir and cook over high heat until veggies are tender, but still crisp.

  5. Drizzle with sesame oil; serve.
