Recipe Ingredients for Ginger Soup with Scallops and Shrimp

6 cups chicken stock
1/2 cup ginger root, thinly sliced, peeled
1 mushrooms, portobello, sliced
8 mushrooms, shitake, sliced
4 oz shrimp, uncooked
6 oz scallops (medium)
1/2 cup green onion, finely chopped
1/3 cup cilantro, to taste, finely chopped

Recipe Directions for Ginger Soup with Scallops and Shrimp

  1. Bring stock to a gentle boil.

  2. Add slices of ginger.

  3. Simmer for five minutes.

  4. Remove ginger from broth.

  5. Add mushrooms and simmer for five more minutes.

  6. Add shrimp and simmer for one minute.

  7. Add scallops.

  8. Simmer for just one minute more then turn off heat.

  9. Add green onions and cilantro right before serving.

  10. The pieces of ginger used to infuse the broth can be saved for another meal. Simply chop the ginger up and sauté it with any combination of meat and vegetables. Once you make the ginger broth, scallops and shrimp aren?t the only direction you can go for soup. Instead, try thin strips of chicken or flank steak simmered with vegetables like Swiss chard, spinach or carrots.
