Original recipe calls for 24 ounces of salmon & serves 6. I only had 12 ounces so I cut the recipe in half (aside from the ginger - I left that the same). This recipe will probably serve 4 (but our kids don't eat as much as we will).

Recipe Ingredients for Ginger Roasted Salmon

12 oz. salmon fillet, skin on
1/2 T rice vinegar
2 t ginger, fresh, grated
1 t honey
1 t olive oil

Recipe Directions for Ginger Roasted Salmon

  1. Preheat oven to 425 degrees (F). Place a rack on a foil-lined cookie sheet & spray with oil. Place salmon, skin side down on the rack.

  2. Mix together the rice vinegar, fresh ginger, honey, and olive oil in a small bowl.

  3. Spread 1 t of ginger mix on each fillet. Roast in oven for 15-18 minutes.

  4. Drizzle each fillet with an additional teaspoon of the ginger mixture.
