Wonderful winter or autumn soup. Use canned pumpkin to make it easy.

Recipe Ingredients for Ginger Pumpkin Soup

1 cup onion
1 cup carrots
1 tsp ground ginger
2 cloves garlic, minced
2 tbsp light butter
16 oz chicken broth
15 oz pumpkin
1 cup milk

Recipe Directions for Ginger Pumpkin Soup

  1. Chop onion and carrots. Saute in pan with butter and garlic until onions are translucent. (I use LandO'Lake Light Butter) If the carrots are still not cooked through, add a little broth and cook until tender. Put in food processor with some broth and blend until smooth. Add with rest of ingredients in a pot and cook on medium until cooked through.

  2. Can serve with sour cream on top - but those calories are not included.
