Serving size two muffins. Use one small can pumpkin puree- I just call it 1.5 cups. With classic gingerbread spices, but adding extra to overcome heaviness of bran. Optionally add 3/4 cup raisins or chopped crystallized ginger. Optionally use applesauce instead of Pumpkin puree. Or shake it up: I used variation on Sky high gingerbread cake: 4 heaping tsp cocoa powder, 4 tsp ginger, 4 cinnamon, 3/4 cloves, 1/2 tsp ground cardamom, 1 tsp ground ancho chili. Could go higher on chocolate and ancho. Very nice effect.

Recipe Ingredients for ginger pumpkin low fat bran muffins

2 cups bran
3 cups whole wheat flour
2 tsp baking soda
2 tsp baking powder
2 tsp ground ginger
2 tsp ground cinnamon
3/4 tsp ground clove
1 cup molasses
4 eggs
1 1/2 cups pumpkin puree
2 cup fat free milk

Recipe Directions for ginger pumpkin low fat bran muffins

  1. mix dry ingredients together

  2. mix wet ingredients together in Mixer bowl.

  3. add dry to wet

  4. scoop into 2 x12 muffin tins (sprayed)

  5. bake 15-17 min 400 degrees.

  6. dislodge with spatula before they cool.

  7. store in fridge.
