Easy, quick-to-bake potatoes flavoured with ginger and herbs.

Recipe Ingredients for Ginger potatoes

2 lb new potatoes, sliced (or 2 cans Del Monte sliced potatoes)
3 tbsps olive oil
4 tbsps ginger
2 tbsps parsley
2 tsp sage
1 tsp thyme
1/4 tsp salt
1 tsp ground pepper

Recipe Directions for Ginger potatoes

  1. Mix olive oil, ginger, parsley, sage, thyme, salt, and pepper in a bowl.

  2. Toss with potatoes.

  3. Coat a baking pan with oil or cooking spray.

  4. Place potatoes in pan.

  5. Bake in an oven heated to 350 degrees for 20-30 minutes, turning once, or until potatoes are golden brown.
