Poached Chicken Breast and mixed salad with a zingy ginger and chili dressing

Recipe Ingredients for Ginger Poached Chicken Breast w/ Spring Mix Salad

16 oz (about 2 large) chicken breast raw meat only
12 tsp g) Ginger Root
28 g (2 TBSP) Roasted Peanut Oil
1 tbsp Toasted Sesame Oil
1/2 tsp Sugar
3/4 tsp Salt
1 tsp Chili Sauce
5 oz Spring Mix Lettuce
4 sliced radishes
1 cup sliced English Cucumber
1 fruit+2"+dia lime

Recipe Directions for Ginger Poached Chicken Breast w/ Spring Mix Salad

  1. Place 1 TBSP salt and chicken in a pan with just enough water to cover. Cook over medium heat and simmer until chicken in cookied. About 15 minutes. Remove chicken from water and shock in ice water for a minute. Then let drain.

  2. Using a small food processor or a grater to grate the ginger and shallot. Blend in the Peanut oil, Sesame oil, sugar, salt and chili sauce. Toss dressing with the Spring Mix, Cucubers and Radish slices, reserving a little to drizzle on top of finished plate.

  3. Slice chicken and place on top of salad. Drizzle reserved ginger dressing and squeeze the juice of 1 lime over the top.
