Recipe Ingredients for Ginger - Orange Tofu Stirfry

1/3 cup water
1/2 tsp ginger
1/4 cup brown rice , uncooked
1/2 cup tofu
1/4 tsp coconut oil
1/4 tsp garlic
1/2 cup bok choy
1/2 cup broccoli
1 carrot , shredded
1/4 red pepper
1/2 orange, juiced
1 tsp tamari

Recipe Directions for Ginger - Orange Tofu Stirfry

  1. Bring water, ginger to a boil - add rice , simmer 40 minutes covered

  2. Add oil to skillet and add tofu, ginger and garlic to pan

  3. Place veggies and let bok choy wilt

  4. add orange juice, tamari, rice to the dish and serve
