Recipe Ingredients for Ginger Muffins

1/2 cup butter
1 cup sugar
2 eggs
3/4 cup molasses
2 cups whole wheat flour
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup skim milk, soured

Recipe Directions for Ginger Muffins

  1. In a mixing bowl, cream shortening and sugar.

  2. Add eggs and molasses; mix well.

  3. Combine dry ingredients; add to creamed mixture alternately with sour milk, mixing just until blended.

  4. Fill greased muffin cups half full.

  5. Bake at 350 degrees F for 16-20 minutes or until muffins test done.

  6. Cool for 10 minutes; remove from pans to wire racks to cool completely.
