Baked sweet potatoes mashed with tropical hints

Recipe Ingredients for Ginger Mashed Sweet Potatoes

1 1/2 pounds sweet potatoes
2 tablespoons coconut milk
1/2 teaspoon grated fresh ginger
1 dash salt
1 dash pepper

Recipe Directions for Ginger Mashed Sweet Potatoes

  1. preheat oven to 400 degrees F

  2. Rub each sweet potato with a few drops of oil. Place the potatoes on the oven rack and bake until they are soft when squeezed, 40 to 60 minutes. Remove the potatoes and set aside until they are cool enough to handle.

  3. Peel the potatoes and place the flesh in a mixing bowl. Add the coconut milk and ginger. Whirl them in a food processor and season to taste with salt and pepper.
