Recipe Ingredients for Ginger & Lime Chicken

0,5 lime yields Lime Juice
0,25 tbsp Syrups, Maple
5 slices (1" dia) Ginger Root
1 Serving Chicken
1 medium Sweetpotato
1 1tsp Olive Oil

Recipe Directions for Ginger & Lime Chicken

  1. Mix Zest of 1/2 lime and juice of 1 lime with maple syrup and 1tsp grated ginger. Slash chicken breast 2-4 times with sharp knife, then coat well with the marinade. Set aside for 10 mins. Heat the grill and line the grill tray with tin foil.

  2. Cook the peeled, chopped sweet potato in boiling water for 10-12 mins until tender. Drain and mash well, adding zest of 1/2 lime plus seasoning. Meanwhile grill the chicken breast for 10-15 mins until cooked through and slightly caramelised.

  3. Heat oil in a small frying pan. When really hot, add thumb sized ginger cut into matchsticks and fry for 1 min until crisp. Lift out with a slotted spoon then stir mash into the ginger infused oil.

  4. Plate up and scatter the ginger sticks over the chicken.

  5. Serve with noodles, rice or sugar snap peas
