Scones are great any time of day - these scones have much less fat and more fibre than the traditional scones. Can serve with jam, devon cream or lemon curd.

Recipe Ingredients for Ginger Lemon Scones

1 1/2 cups flour
50 g oat bran
1/3 cup brown sugar
2 tsp baking powder
1 tsp baking soda
1/3 cup candied ginger, chopped up
1/2 tsp salt
1 cup buttermilk
2 tbsp butter, melted
1 tsp vanilla
2 tsp grated lemon zest

Recipe Directions for Ginger Lemon Scones

  1. Preheat oven to 400 degrees F. Spray cookie sheets with cooking spray and set aside.

  2. Mix dry ingredients together in large bowl:

  4. In separate bowl mix butter, buttermilk, lemon zest and vanilla.

  5. Add wet ingredients to dry and mix (will be lumpy and moist).

  6. Fold out on floured surface & divide into 2 pieces. Shape into a ball.

  7. Place ball on cookie sheet and cut each circle into 6 wedges.

  8. Cook in preheated oven for 15 minutes.
