453 3/5 grams Fresh Boneless Skinless Chicken Breasts
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 cup, sliced Onions
1/4 cup slices (1" dia) Ginger Root
6 oz Italian Parsley
6 oz Mint
2 oz Rice Vinegar
2 tbsp Extra Virgin Olive Oil
2 tsp Coriander Seed

Recipe Directions for Ginger/Herb Chix+Peppers

  1. Mix sauce/set aside. Cut chix, peppers, onion into strips. Cook in EVOO.

  2. Mix and serve on rice.
