These will keep in an airtight container for up to five days.

Recipe Ingredients for Ginger and Golden syrup muffins

200 g self-raising flour
1/2 tsp bicarbonate of soda
1 tsp mixed spice
1 tbsp ground ginger
100 ml sunflower oil
100 g golden syrup
100 g dark muscovado sugar
2 medium eggs
200 ml milk

Recipe Directions for Ginger and Golden syrup muffins

  1. pre-heat the oven to 200c/400f/gas 6. Line a 12 hole muffin tin with paper muffin cases.

  2. Sieve the flour, bicarbonate of soda, mixed spice and ginger into a bowl.

  3. In a jug mix together the oil, golden syrup, muscovado sugar, eggs and milk.

  4. Pour the wet ingredients into the dry, then gently mix them together. Spoon the mixture into the muffin cases and bake for 10-15 minutes until well-risen and firm.
