Minced garlic, sliced ginger, white chicken meat, mushrooms, cilantro and onions combine with coconut milk and crushed red pepper to make a wonderful dish to serve over brown rice.

Recipe Ingredients for Ginger Garlic Chicken

32 ounces boneless skinless chicken breast
48 ounces raw crimini mushrooms
4 cups chopped green onions
1 cup chopped cilantro
5/8 cup olive oil
1/4 cup chopped fresh ginger
1/4 cup minced garlic
1 cup chopped yellow onion
2 tablespoons crushed red pepper
1/4 cup soy sauce
1/4 cup rice wine vinegar
26 ounces coconut milk

Recipe Directions for Ginger Garlic Chicken

prepare all vegetables, chopped or sliced, saute in olive oil in batches. roast chicken in oven and drain fat, slice into bite-size pieces and mix all ingredients together until combined and warm. serve over brown rice
