Delicious Gingerbread cookies, found on Allrecipes - For cookies, in addition to 1/6 cup sugar, use 8 packets Stevia. For frosting, use another 8 packets.

Recipe Ingredients for Ginger Cuts

1/6 cup sugar
1/2 cup molasses
1/4 cup coffee
2 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp nutmeg
1/8 tsp cloves
1/8 tsp ginger
1/4 cup water
1/2 tsp white vinegar
28 g. miniature marshmallows
1 egg white

Recipe Directions for Ginger Cuts

  1. Combine stevia, coffee, and molasses in large mixing bowl.

  2. In separate bowl, mix flour, soda, salt, and spices.

  3. Add the two together well, and refridgerate dough for 2 hours+.

  4. Preheat the oven to 350°. Spray cookie sheets down after placing aluminum foil.

  5. After adding water to avoid crumbling, roll out dough onto floured counter and cut into desired portions.

  6. Bake the cookies for 8-10 minutes (even if recipe is doubled). Let them cool on the wired racks.

  7. For Frosting: Combine stevia, water, and vinegar. Let boil over medium heat, then stir in marshmallows at low heat until melted. Add a frothy egg white slowly and mix at high speed until frothy. Frost cookies, and let them cool.
