Wee ginger gems that you can ice if you wish, or serve with some low fat yoghurt.

Recipe Ingredients for Ginger cupcakes

2 cups flour
3/4 cup brown sugar
3 tablespoons baking powder
2 tablespoons ginger
2 eggs
1 cup milk
1 teaspoon allspice

Recipe Directions for Ginger cupcakes

  1. Mix dry ingredients in one bowl

  2. Mix wet ingredients in another

  3. Make a well in the centre of the dry ingredients and add the wet ingredients gradually.

  4. Spoon into cupcake cases or small muffin tins... should make about 25-30 cupcakes

  5. Cook at 180c for 15 minutes or until brown.
