Recipe Ingredients for Ginger Collard Greens (Kathe Ana)

6 cups collard greens (1 bag)
6 cloves garlic
1 onion, medium
1 oz ginger , grated
1/2 tsp cayenne pepper
2 cups chicken stock
1/4 cup lemon juice
2 tbsp. vinegar, red wine
2 tbsp. olive oil
1 salt and pepper to taste

Recipe Directions for Ginger Collard Greens (Kathe Ana)

  1. In wok or large frying pan, saute onion, ginger and garlic in 2 T olive oil over medium high heat until the onions are transparent. Add Collard greens. Cook until tender. Add 1 cup of chicken stock . Reduce hear to medium. Braise for 45 minutes. Add Lemon juice , vinegar, cayenne pepper and 1 cup of chicken stock. Continue to braise 45 minutes.

  2. add salt and pepper to taste.
