Recipe Ingredients for Ginger Chicken Stir-Fry

2 tbsp (25 mL) olive oil
2 tbsp Ginger Root
2 clove garlic, minced
10 oz boneless skinless chicken breasts, cubed
1/2 large onion chopped
1/2 green pepper, diced
1 cup sliced mushrooms
1 tbsp soy sauce
1 tbsp oyster sauce
2 tbsp chopped fresh mint

Recipe Directions for Ginger Chicken Stir-Fry

  1. In skillet or wok, heat oil over high heat; stir-fry ginger and garlic for 30 seconds or until fragrant.

  2. Add chicken; stir-fry for 2 to 4 minutes or until lightly browned.

  3. Add onions, sweet pepper and mushrooms to skillet; stir fry for 1 to 3 minutes or until softened.

  4. Stir in soy and oyster sauces, tossing to coat. Sprinkle with coriander (or mint).
