Recipe Ingredients for Ginger Chicken with Spicy Broccoli

1/4 cup honey
2 1/2 tablespoons grated fresh ginger
2 1/2 tablespoons soy sauce
5 teaspoons rice vinegar
3 garlic cloves, minced
1/2 teaspoon red pepper flakes
1 tablespoon olive oil
24 oz. skinless chicken breasts
1 pound broccoli florets, chopped, stems peeled and sliced
2 teaspoons toasted sesame oil

Recipe Directions for Ginger Chicken with Spicy Broccoli

  1. Whisk honey, ginger, soy, vinegar, garlic and pepper flakes together in bowl. Heat oil in skillet over medium-high heat until just smoking. Cook chicken, skin-side down, until well browned, about 5 minutes. Reduce heat to medium and continue to cook, covered until meat registers 160 degrees, about 15 minutes. Transfer chicken to platter and tent with foil.

  2. Meanwhile, place broccoli in large bowl, cover with plastic wrap, and microwave until bright gree and tender, 4 to 7 minutes. Pout off any liquid from bowl, then toss broccoli with sesame oil and 2 tablespoons honey mixture until well coated.

  3. Add remaining honey mixture to empty skillet and cook over medium-high heat until thickened, about 3 minutes. Pour glaze over chicken. Serve with broccoli.

  4. Use a sharp knife to remove tough exterior from broccoli stems, then slice them crosswise into thin pieces.
