Chicken & Carrots with a touch of ginger

Recipe Ingredients for Ginger Chicken & Carrots

3 lbs boneless skinless chicken breasts (8 thin breasts or 4 large breasts cut in half)
1 lb carrots
1 large onion
3 garlic cloves
1/8 box vegetable bouillion (1 cube for 2 cups of water)
2 tbsp olive oil
1 cup Water
1 Ginger powder to taste

Recipe Directions for Ginger Chicken & Carrots

  1. Heat 1-2 tbsp olive oil in a pan with a lid (you'll need the lid later) on medium heat

  2. Working in batches, brown chicken on both sides and set aside

  3. Slice carrots & sautee in pan until they start to get soft (adding more oil if necessary)

  4. Cut onion into strips and then add to pan, turning heat to low (this will caramelize the onions a little & give the dish a little sweetness)

  5. While onions cook, peel garlic cloves, slice them in half, & add them to the pan

  6. When the onions are translucent, return the chicken to the pan

  7. Pour in 2 cups of water, vegetable bouillion cube, and season with powdered ginger (you'll use a pretty healthy shake of it, but stir & taste the broth to get the right amount for your tastebuds)

  8. Put the lid on and simmer about 15 minutes until the chicken is done. If you want less liquid, remove the lid & turn up the heat to boil it off (don't get rid of all of it, and with the volume of the chicken you may have a lot less liquid in the pan than it appears)

  9. Serve over brown rice, or in a bowl with a piece of wheat bread to sop up the juice
