Recipe Ingredients for Ginger Chicken with Broccoli and Oranges

4 tsp canola oil
4 ounces ginger root
2 pounds skinless chicken thighs
4 cups broccoli florets
1 cup low sodium chicken broth
1/4 cup orange juice concentrate
1/2 cup water
3 tsp cornstarch
3 tbsp reduced sodium soy sauce
2 navel oranges

Recipe Directions for Ginger Chicken with Broccoli and Oranges

  1. slice ginger into 4" long thin strips

  2. heat oil and saute ginger until brown

  3. remove ginger and put on small plate

  4. saute chicken thighs until cooked

  5. remove meat from bone and put on plate

  6. combine broccoli and water in skillet

  7. scape up browning from chicken and mix

  8. cover pan until cooked 3 to 4 minutes

  9. return chicken to skillet and stir in broth

  10. Stir in orange juice and soy sauce

  11. add dissolved cornstarch

  12. heat until mixture boils and thickens

  13. Plate dish and garnish with browned ginger strips
