Fresh and light Carrot soup. Can be eaten cold or hot.

Recipe Ingredients for Ginger Carrot Soup

16 oz Carrots
2 medium (2-1/2" dia) Onions
3 cup Soup, chicken broth, canned, less/reduced sodium
3 fruit (2-5/8" dia) Oranges
2 tbsp Natural Buttery Spread With Olive Oil
2 tsp Ginger Root

Recipe Directions for Ginger Carrot Soup

saute carrots and onion in 2 tlb margarine. Add 2 c chicken broth and simmer until vegetables are tender. Peel and seed oranges. Put all ingredients in a blender such as a Vitamix and puree. If Vitamix is not available substitute 1 cup Orange juice for oranges.
