A spicy carrot cake. Instead of raisins use dried fruit bit( you can find them by the raisins at the grocery store).

Recipe Ingredients for Ginger Carrot Cake

3 1/2 c. carrots
2 c. flour
1 1/2 c. sugar
1 c. raisins
2 t. baking powder
1/4 t. baking soda
4 eggs
3/4 c. olive oil
2 T. ginger
1 T. cinnamon
6 oz. cream cheese fat free
2 c. powdered sugar
2 T. orange zest

Recipe Directions for Ginger Carrot Cake

  1. Shred the carrots finely. Add the eggs,oil and spices to the carrots. mix the flour, sugar, b.soda,and b.powder together, then add the carrot mixtureto it. Mix well. pour in to 2 9inch cake pans or 1 9x13 pan. bake at 350 for 25-35 min till done. Cool on rack.

  2. Make the frosting by beting the cream cheese till fluffy add powdered sugar slowly. add enough to get desired constiancy and taste. Add orange zest if you want. frost cake and enjoy.
