Tasty cake-like cookies with a great ginger "snap."

Recipe Ingredients for Ginger Cake Snaps

1/2 c sugar
3 T applesauce
3 T butter, melted
1 egg
1/2 c sorghum
1 3/4 c whole wheat flour
1/4 c wheat germ
1 T ginger
3/4 tsp cinnamon
1 tsp baking soda
1/4 tsp salt

Recipe Directions for Ginger Cake Snaps

  1. Blend sugar, applesauce and butter until smooth.

  2. Add egg and molasses.

  3. Mix in remaining ingredients until just mixed.

  4. Spoon by the heaping teaspoonful onto an ungreased baking sheet.

  5. Bake at 350 degrees for 9-11 minutes or until tops are slightly cracked.

  6. Can put dough into refrigerator for an hour to firm up dough if desired.
