Vegetarian ginger balls, to be used as meatballs (very dry and boring without sauce)

Recipe Ingredients for Ginger Balls

1/2 oz ginger
1 cup bok choy
4 eggs
1 cup red lentils
2 cups black beans
2 cups white rice
1 cup bread crumbs
2 tbsp sesame seeds

Recipe Directions for Ginger Balls

  1. Cook lentils, rice and beans

  2. Mix in blender, with chopped bok choy and eggs

  3. Mix in bowl and add bread crumbs until firm and workable.

  4. Add grated fresh ginger, adobo and garlic to taste

  5. Make balls

  6. Bake in owen at 375 F for about half hour
