Gina has a great blog with delicious Weight Watcher recipes. This is a variation of her recipe and one of my favorites.

Recipe Ingredients for Gina's Crock Pot Santa Fe Chicken

23 ounces chicken breast, boneless, skinless
15 ounce can black beans
14 2/5 ounce can diced tomatoes
8 ounce can corn
1 tsp cumin
1 tsp cayenne pepper
1 tsp garlic powder
1 tsp onion powder

Recipe Directions for Gina's Crock Pot Santa Fe Chicken

  1. Place chicken in the bottom of the crock pot.

  2. Add all ingredients and cook for 4-6 hours on high.

  3. Shred chicken when cooked through.

  4. Serve over rice.
