Recipe Ingredients for Gina's Chicken Gumbo

5 link Italian Mild
2 tbsp Spreadable Butter with Canola Oil
1 tbsp Extra Virgin Olive Oil
5 cup Chicken Broth
0.5 cup Gold Medal All Purpose Flour
1 medium (2-1/2" dia) Onions
1 medium raw Bell Pepper Green
16 oz Diced Tomatoes
2 clove Garlic
3 medium Squash, Summer, All Varieties
1 tsp Spices Ground White Pepper
1 Teaspoon Thyme
1 tsp Celery Seed
1 tsp Paprika
1 tsp Salt, Table
1 serving Cayenne Pepper
1 tbsp, crumbled Bay Leaf
1 lemon yields Lemon Juice

Recipe Directions for Gina's Chicken Gumbo

  1. In large pot add a little oil and brown the sausage.

  2. Remove the sausage and add the zucchini and squash.

  3. cook until slightly soft then remove and set aside with sausage.

  4. Add the butter, then add the onion and bell pepper. saute them until the onions are slightly translucent.

  5. add all the spices and stir for about another minute or 2.

  6. Add the flour and continue to cook until browned.

  7. Add the chicken stock, can of tomatoes (juice and all) and lemon juice, and stir well. dump in the sausage, zucchini and squash.

  8. Bring to a boil then reduce and let simmer for an hour.

  9. Make sure to taste it periodically and season as you see fit.

  10. (Serve over lemon flavored rice.)
