Mmmm... warm comforting winter flavors in an easily-prepared meal (especially if frozen ahead of time!)

Recipe Ingredients for Gina's Chicken Casserole Supreme (Freezer)

2 lbs. chicken breasts
2 T. olive oil
1 c. sliced fresh mushrooms
1/2 large onion, chopped
3 garlic cloves, pressed
1 salt and pepper to taste
16 oz. light sour cream
1 can mushroom soup
8 oz. whole-wheat bread, cubed and toasted
1 tbsp. poultry seasoning
1 1/4 c. chicken broth
10 oz. broccoli, frozen spears, thawed and drained

Recipe Directions for Gina's Chicken Casserole Supreme (Freezer)

  1. Season chicken with salt and pepper. In a skillet, saute the chicken in the oil with the onions and mushrooms til browned. Add garlic and saute for 1 more min.

  2. Cube meat and add to a bowl with all the skillet contents, sour cream and soup. Blend well.

  3. Pour mixture into a 2-qt. casserole dish. Mix together cubed bread, seasoning and broth. Set aside. (If freezing, use a disposable metal pan, add broccoli and stuffing and freeze now. Bake 1-1/2 to two hours from freezer or thaw overnight in fridge and bake as directed.)

  4. Lay broccoli on top of chicken in casserole, place stuffing evenly over and bake for 45 min. at 350.

  5. Serve with cranberry sauce and a salad and add a veggie to supper.

  6. **Variation: Add 1/2 c. golden raisins and 1 chopped cooking apple to broth, simmer for about 8-10 min. before adding bread cubes and seasoning.
