Recipe Ingredients for Gilligan Muffins

3 cups flour
3/4 cup white sugar
3/4 cup brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 eggs
3/4 cup 2% milk
1 tbsp vanilla extract
3/4 cup canola oil
3 bananas
1 cup sunflower seeds, raw, unsalted
1 cup quick oatmeal
1 cup shredded coconut
3/4 cup chocolate chips

Recipe Directions for Gilligan Muffins

  1. Preheat oven to 350 degrees. Grease muffin tins

  2. In a bowl, mix the flour, sugar, baking powder, ,baking soda, and salt.

  3. Mix in the eggs, milk, vanilla, and oil.

  4. Fold in 2 mashed bananas, 1 chopped banana, sunflower seeds, oatmeal, coconut, and chocolate chips.

  5. Scoop into the prepared muffin tins.

  6. Bake 22-25 minutes in the oven, or until a knife inserted in the center of a muffin comes out clean.
