Middle Eastern rice and chick pea casserole.

Recipe Ingredients for G'Idre

2 pounds lamb, shoulder, steak
4 1/2 cups rice
1/4 cup vegetable oil
2 large onions, minced
2 tsp salt
6 cloves garlic, minced
1 tsp saffron
24 ounces chick peas
1 tbsp vegetable oil
2 tbsp pine nuts
2 tbsp almonds
1 tsp allspice
1/4 tsp black pepper

Recipe Directions for G'Idre

  1. Soak rice in 2 quarts hot water.

  2. Bring lamb to the boil lamb in 2 quarts water with 1 tps salt in a large stockpot. Skim the fat, reduce heat and simmer until tender, about 2 hours.

  3. Remove the pieces of lamb from the stock, reserving liquid. Drain the rice and canned chick peas.

  4. Heat 1/4 cup vegetable oil in bottom of another large Dutch oven. Add onion and garlic and fry, stirring constantly until slightly softened. Add the rice, remaining salt, saffron or annato, black pepper and pieces of meat. Stir to distribute spices evenly. Add 4.5 cups stock, to cover. Bring to a boil, reduce heat and simmer about 25 minutes until rice is fluffy and dry.

  5. Turn out onto a large serving platter, and top with the 2 tsbp pine nuts and 2 tbsp almonds that were fried until brown in the remaining tablespoon of oil.
