Recipe Ingredients for Gib's Gourmet Muffins

1 1/2 cups whole wheat flour
100 g Natural Wheat Bran
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
1 cup skim milk
2 egg whites
1/2 cup canola oil
1/2 cup liquid honey
1/2 cup molasses
2 cups raisins
432 g crushed, unsweetened pineapple

Recipe Directions for Gib's Gourmet Muffins

  1. Preheat oven to 350

  2. In large bowl combine flour, bran, baking powder, baking soda, cinnamon, and nutmeg.

  3. In a separate bowl combine milk, egg whites, oil, honey, and molasses. Stir in raisins and pineapple. Add to dry ingredients, stirring just until moistened; do not over mix.

  4. Spoon batter into greased or paper-lined muffin cups filling about three-quarters full. Bake in preheated oven for 20-25min or until tops spring back when lightly touched.
