I remember a recipe from my Bellydance instructor being absolutely exceptional; but I never wrote it down. This is as close as I can remember it....

Recipe Ingredients for Gia's Taboulleh

1 cup Extra Virgin Olive Oil
1 cup Lemon Juice
2 cups couscous
3 cups parsley, stemmed, chopped
2 cups cucumber, seeded, diced
3 cups tomatoes, seeded, diced
3 green onions, chopped
4 tbs dried mint
1 tsp salt
1/2 tsp pepper

Recipe Directions for Gia's Taboulleh

  1. Combine couscous, dried mint, salt/pepper, lemon juice, and olive oil in separate bowl, set aside to absorb. It takes about 5 minutes)

  2. Combine remaining ingredients in larger bowl.

  3. When couscous has absorbed the liquids, combine with remaining ingredients in a large bowl.
