Giant low fat lemon and blueberry muffins with a cinnamon crumble topping

Recipe Ingredients for Giant Lemon & Blueberry Muffins (Low Fat)

220 g Self Raising Flour
110 g Pure Cane Sugar, Golden Light Brown
1/2 tsp Salt
1 tsp Baking Powder
40 ml Sunflower Oil
2 tsp Vanilla Extract
2 tsp Lemon Extract
1 Egg
130 ml Semi-Skimmed Milk
200 g Fresh Blueberries
20 g Dark Brown Sugar
20 g Flour
12 g Lighter Spreadable
2 tsp Cinnamon

Recipe Directions for Giant Lemon & Blueberry Muffins (Low Fat)

  1. Preheat oven to 200 degrees C and line giant muffin cups

  2. Combine Flour, Sugar, Salt & Baking Powder in a large bowl and make a well. Pour in Sunflower Oil,

  3. Milk, Egg, Vanilla Essence & Lemon Extract, and mix / whisk until a thick batter is formed.

  4. Fold in the Fresh Blueberries and then fill the muffin cups right to the top, sprinkling generously with crumble topping.

  5. Bake for 30-35 minutes in the oven, or until done.

  6. Note:

  7. To make Crumble Topping: In a small bowl, combine flour, brown sugar and cinnamon. Add butter and using your fingertips,work into flour mixture, squeezing until a nice crumbly mixture forms.
