Recipe Ingredients for Giant Crusty and Creamy White Beans with Greens

1/2 lb med or large white beans , cooked
3 tbs olive oil or clarified butter
1 dash salt (fine-grain sea salt)
1 onion, coarsely chopped
4 cloves garlic, chopped
7 leaves chard , preferably rainbow chard, leaves cut into wide ribbons and 1 or 2 stems cut into 1/2 inch pieces
1 freshly ground black pepper
1 tsp extra-virgin olive oil for drizzling
1/4 cup grated parmesan cheese, for topping

Recipe Directions for Giant Crusty and Creamy White Beans with Greens

  1. Drain beans

  2. Heat butter/oil over med-high heat in wide skillet

  3. Add beans in single layer, stir to coat and then let sit long enough to brown (3-4 min) before turning to other side (3-4 min). The beans should be golden and a bit crunchy outside and creamy inside.

  4. Salt to taste, add garlic and onion and cook 1-2 min, until onion softens

  5. Stir in chard and cook until just begins to wilt.

  6. Remove from heat, season to taste with generous dose of salt and pepper. Drizzle with a bit of top quality extra virgin olive oil, and sprinkle with freshly grated parmesan.
