Giada's Venetian Mac and Cheese with Chicken

Recipe Ingredients for Giada's Venetian Mac and Cheese with Chicken

1 lb roasted chicken, deboned and deskinned
12 ounces wide egg noodles
2 1/2 cups whole milk
2 cups heavy cream
2 teaspoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups (packed) finely grated fontina cheese
3/4 cup (packed) finely grated Parmesan cheese
3/4 cup (packed) grated mozzarella cheese
2 tablespoons finely chopped fresh flat-leaf parsley

Recipe Directions for Giada's Venetian Mac and Cheese with Chicken

  1. Preheat oven to 350 degrees.

  2. Place chicken in baking dish that has been sprayed with Pam Olive Oil.

  3. Sprinkle both sides of chicken with Italian Herbs and Garlic Powder.

  4. Cover with aluminum foil.

  5. Bake for 60 minutes.

  6. Remove chicken, and cut into small pieces.

  7. Preheat the oven to 450 degrees.

  8. Butter a 9 x 13 x 2-inch glass baking dish.

  9. Cook noodles in a large pot of boiling water, about 5 minutes.

  10. Drain, but do not rinse.

  11. Whisk milk, cream, flour, salt and pepper in a large bowl to blend.

  12. Stir in 1 cup of fontina, 1/2 cup of the Parmesan, 1/2 cup of the mozzarella and parsley.

  13. Add the noodles and toss to coat.

  14. Transfer the noodles mixture to the prepared baking dish.

  15. Combine the remaining 1 cup of fontina, 1/4 cup of Parmesan, and 1/4 cup of mozzarella in a small bowl and toss to blend.

  16. Sprinkle the cheese mixture over the noodle mixture.

  17. Bake until the sauce bubbles and the cheese melts and begins to brown on top, about 15 minutes.

  18. Let stand for 10 minutes.

  19. Serve warm.
