Delish, easy, and quick. Make it healthier by spreading on some nut butter, or adding nuts with the bananas- yum!

Recipe Ingredients for GF Vegan Banana Bread

1/3 cup canola oil
1 cup sugar
1 tbsp molasses
2 tbsp flax seeds
6 tbsp water
1 tsp vanilla extract
7 serving (1.75 cups) GF baking flour blend
2 tsp baking powder
1 1/4 tsp cinnamon
1 tsp xanthan gum
1/2 tsp salt
3/4 cups mashed banana

Recipe Directions for GF Vegan Banana Bread

  1. Preheat oven to 350 F. Grease and flour with rice flour one 9x 5 loaf pan, 3 3x5 loaf pans, or 18 muffin tins. I made one 3x5, one 5 x 5 shallow, and 6 muffins, so mix it up.

  2. Grind flax seeds and place in a small pot with water.

  3. Heat to boil, then simmer until the consistency of an egg. Allow to cool.

  4. Cream together oil, sugar, molasses, and vanilla. Mix in flax.

  5. Add flour mix, baking powder, cinnamon, xanthan gum and salt to flax mixture. Mix well.

  6. Add mashed bananas to mix. You may use up to 1.5 cups of banana if you wish.

  7. Place batter, which will be a soft batter, into greased tins.

  8. Bake 45 mins for large loaf, 30 mins for smal loaf, and 20 mins for muffins, checking frequently.
