From Bob's Red Mill Corn Starch package.

Recipe Ingredients for GF Lemon Meringue Pie

1 1/3 c sugar
1/4 c corn starch
3 eggs
1/4 c lemon juice
1 T lemon peel, grated
1 T margarine

Recipe Directions for GF Lemon Meringue Pie

  1. Mix 1 cup sugar and corn starch in a pan and slowly add water.

  2. Separate eggs and stir egg yolks into sugar mixture.

  3. Stirring constantly, bring to a boil over medium heat; boil one minute

  4. Remove from heat and stir in lemon juice, peel and margarine/butter.

  5. Pour into a baked 9" pie crust.

  6. Beat egg whites with 1/3 cup sugar until stiff peaks form.

  7. Spread over lemon filling, sealing edges of pie crust.

  8. Bake at 350 for 10 minutes, until meringue is browned.
