Gluten-free granola bars - tasty and adaptable!

Recipe Ingredients for GF Granola Bars

1/2 cup honey
1/4 cup brown sugar
1 tsp. vanilla
1/2 cup peanut butter
1 cup oats
1/2 cup coconut
1/2 cup dried apricots
1/4 cup peanuts
1/4 cup chocolate chips

Recipe Directions for GF Granola Bars

Heat the honey and brown sugar until uniformly bubbly. Remove from heat and add 1 teaspoon of vanilla and 1/2 cup of peanut butter. Stir until smooth. Pour over the dry ingredients (mixed together in a bowl) and stir to coat. Bake at 350 for 20 minutes.
