Gluten free cinnamon swirl muffins with streusel topping

Recipe Ingredients for GF Cinnamon Swirl Muffins

6 tbsp Butter
3 oz Light Brown Sugar
1.375 cup Organic Brown Rice Flour
1.25 tsp Cinnamon, Ground
0.5 oz Baking Powder
0.25 tsp Salt, Table
2 oz Organics 100% Pure Maple Syrup
1 large Egg, Whole
0.5 cup Milk, Buttermilk, Fluid, Cultured, Lowfat

Recipe Directions for GF Cinnamon Swirl Muffins

  1. Combine brown sugar, butter, flour and cinnamon in a bowl. Use a pastry blender to incorporate butter into mixture until crumbly.

  2. Preheat oven to 350 and grease muffin tin

  3. In a medium bowl combine sugars and butter and beat until fluffy. Add in egg, buttermilk and vanilla. Stir in the dry ingredients, flour, baking powder and salt. Mix just until blended. Do not over stir. Fill muffin tins with half of muffin mixture. Sprinkle half of Cinnamon Swirl mixture on top of batter. Fill muffin tins with remaining muffin mixture and top with remaining cinnamon mixture.

  4. Bake for 15-18 minutes or until toothpick comes out clean. Cool in the pan for 5 minutes and then remove to wire rack. Makes 6 muffins
