I use gluten free flour and 3/4 tsp xanthum gum but you can make it with regular flour and omit the XG so I left it off the recipe. I was using about 1/2 cup of packed brown sugar but my hubby wanted them sweeter...they don't need to be so try less first.

Recipe Ingredients for GF chocolate chip java pecan cookies

1 cup pecans, roasted
2 cups flour
1 cup butter, room temperature
7/8 cup brown sugar, packed
1 tbls vanilla
3 tbls instant coffee crystals
2 eggs
1 cup chocolate chips

Recipe Directions for GF chocolate chip java pecan cookies

  1. Preheat oven to 325 and put chopped pecans on cookie sheet to roast, about 5 minutes.

  2. Place softened butter in large mixing bowl

  3. add sugar, vanilla, coffee crystals and eggs

  4. Beat with mixer on low speed advancing to high for about 3 minutes.

  5. Slowly add the flour (and XG if using GF flour) and continue to beat on low speed.

  6. Add chocolate chips and fold in with spoon

  7. using a teaspoon place cookies on cookie sheet

  8. bake at 325 for 18 minutes

  9. makes 50-60 cookies based on size
