This is a gluten-free cake. Very rich and fairly easy to make.

Recipe Ingredients for GF Chocolate Cake

1 c semisweet chocolate chips
1 c butter or trans-free margarine, softened
2/3 c sugar
6 eggs, large
3/4 c blanched almonds, finely chopped

Recipe Directions for GF Chocolate Cake

  1. Preheat oven to 325 F

  2. In the top of a double boiler, melt the chocolate chips over hot water.

  3. In a medium bowl, combine the egg whites and the remaining 1/3 C sugar. Using the mixer on high speed (make sure the beaters are clean and dry), beat for about 2 minutes or until stiff but not dry.

  4. In a medium bowl, cream the butter with 1/3 C of the sugar. Add the egg yolks and, using an electric mixer on high speed, beat for 2-3 minutes or until very light.

  5. Stir in the melted chocolate and almonds/almond flour and mix well.

  6. With a rubber spatula, fold into the chocolate batter.

  7. *Reserve 1/2 C of the batter. Pour the remaining batter into an **ungreased 8" spring form pan. Bake for 1 hour, or until a toothpick inserted in the center comes out clean.

  8. Cool in the pan on a rack for 10 minutes. When the cake is cool, run a knife around the edge and remove the frame.

  9. *Pour the reserved batter over the top of the cake and chill, uncovered for 2-3 hours.

  10. Garnish with chocolate shavings, if desired.

  11. *I didn't do this. I used all the batter in the cake and used a canned icing.

  12. ** I used a soufflé dish. It needs to be greased on the bottom.
