Gluten Free Jumbo Corn muffins with Blueberries

Recipe Ingredients for GF Blueberry Corn Muffins

1 cup flour, rice
3/4 cups cornmeal
2 tablespoons sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup 1% milk
1/4 cups I can't believe it's not butter, light
1 cup blueberries

Recipe Directions for GF Blueberry Corn Muffins

  1. Mix all the dry ingredients well. Include a teaspoon of xanthan gum if desired.

  2. Beat the eggs and mix with the milk and cooled melted butter.

  3. Stir into dry ingredients all at once, just enough to moisten.

  4. Gently fold in the bluberries.

  5. Spoon the batter into a greased Jumbo muffin pan (6).

  6. Bake at 400 for 25-30 minutes or until a toothpick stuck in the center comes out clean.

  7. 6 servings.
