This soup helped me get well soon, but my SO thought it was rather bland. For the unsick, add some pepper, more broth powder, and other yummy herbs. For a glutenous version, use regular noodles, as GF soba falls apart a bit.

Recipe Ingredients for Get Well Soup

10 oz chicken breast
2 medium onions
5 stalks, medium, celery
2 cloves garlic
2 peppers, Anaheim, 115531
2 large peppers, sweet, green
3 peppers, hot chili, red (2 cayenne and 1 red hot)
1 pepper, hot chili, green (jalapeno)
1 tbsp broth powder
5 leaves fresh basil
1 tbsp fresh rosemary
3 oz soba
10 cups water

Recipe Directions for Get Well Soup

  1. Cut chicken into small pieces. Do the same with 1/2 an onion and 2 celery stalks. Place in pressure cooker with enough water to cover.

  2. Pressure cook for 10-15 mins, until everything is cooked and falling apart.

  3. Meanwhile, finely chop all other ingredients except soba, water, and broth powder. Place in large stock pot.

  4. Strain the chicken and veggies, reserving cooking liquid. Shred the chicken as you place in in the stock pot. Add the cooked veggies, then the liquid.

  5. Add enough water so that the total volume of chicken, veggies, and liquid is about 16 cups.

  6. Bring to a boil, then add broth powder and soba.

  7. Reduce heat and simmer until done, about 1/2 hour.

  8. Further season as desired.
