German Potato Salad without bacon

Recipe Ingredients for German Potato Salad

450 grams Potatoes, Boiled
1 tbsp Vegetable Oil, Canola
1 tbsp Vinegar, Cider
0.5 tbsp Vinegar distilled
0.17 cup Organic Vegetable Stock
0.25 medium (2-1/2" dia) Onions
0.13 cup Mustard, Prepared, Yellow
1 tbsp Parsley
1 tbsp chopped Chives

Recipe Directions for German Potato Salad

  1. Wash potatoes, place in a double boiler/steamer basket over hot water and cook until tender. Remove and let cool for about 5 minutes, then peel and cut into quarters which are then cut into 1/8 inch slices and place in a large bowl.

  2. Immediately after slicing the potatoes, add the oil, vinegars, and 1/2 of the broth. Carefully toss to coat. Add onions, mustard, herbs, and season with salt and pepper. If your potato salad seems dry, add the rest of the broth. Serve or refrigerate until ready for use.
