Traditional sweet and Sour potato salad. (Also delicious with sweet potatoes)

Recipe Ingredients for German Potato Salad

40 oz Potatoes, Red, Flesh And Skin
15 medium slices, cooked (raw product packed 20/lb) Pork, Cured, Bacon
2 medium raw Onion Red
0.5 cup, packed Sugars, Brown
2 oz Apple Cider Vinegar
0.75 cup Olive Oil

Recipe Directions for German Potato Salad

  1. Dice the potatoes and boil until fork tender.

  2. While the potatoes are cooking, fry the bacon until crisp - drain on paper towels - and crumble.

  3. Dice the onion and saute it in 2 tbsp of the rendered bacon fat.

  4. Combine brown sugar and vinegar - whisking until the sugar is dissolved. Continue whisking while slowly adding the olive oil. Add salt and pepper to taste. Add the onion and most of the crumbled bacon (reserve the rest of the bacon for garnish.)

  5. Toss the drained potatoes with the dressing. Let sit at room temperature for 30 minutes. Garnish with the crumbled bacon. Serve warm.
