This is a great potato salad my great grandmother used to make. This is a dish that people always finish. It is low calorie count per serving. It is easy to make! It can be eaten both hot and/or cold but it is best cold. Once done place in the fridge for half an hour, then indulge and enjoy!!

Recipe Ingredients for German Potato Salad

1 kg potatoes
2 large onions, diced
4 cucumbers, grated
3 tbsp olive oil
10 g vegetable stock
5 tbsp vinegar
4 tbsp mustard
3 tbsp parsley
1 salt and pepper to taste

Recipe Directions for German Potato Salad

  1. Take potatoes (with skin) boil them. Once done, peel and dice them; set aside.

  2. In a separate plate add olive oil to the cucumbers and set aside.

  3. In a heavy soup pot over medium heat, add the onion, stirring occasionally, until tender and translucent, 3 to 4 minutes. Add the cucumbers and vegetable stock. Stir until vegetable stock is melted within mixture. Then add the vinegar, stir and set aside.

  4. Add the diced potatoes to the mixture in the pan and stir. Add the salt and pepper to taste. Lastly, stir in the mustard and parsley.
